This is based on the English version of Masala.
1 lb cubed chicken breast (or 1lb cubed firm Tofu frozen then thawed) 1 large yellow onion diced 1 carrot sliced thin 1 can diced potatoes (just makes things easier) 1 can tomato soup (pref. Heinz or Cambell's) 1 Tsp. masala powder 1 Tsp. Heinz 57 sauce (1 Tsp. Lite Soy sauce if using Tofu) 1/2 Tsp. tarragon, dried 1/2 Tsp. sesame or olive oil (for chicken, double for Tofu) 4 cups brown rice prepared according to package
Coat hot skillet with cold oil. Add diced onions and sautee until just soft. Add tofu or chicken (add soy sauce if using tofu), and carrots, cook through. (Tofu should have a slight crisp to it's edges). Add potatoes, tomato soup, Heinz 57, and tarragon. Cover and allow to simmer for 20 minutes. Stir occasionally. Ladle over brown rice.
Masala Powder (if not available) 1/2 Tsp. ground cinnamon 1/2 Tsp. all spice 1/2 Tsp. ground cardamom 1/2 Tsp. sweet paprika 1/2 Tsp. curry powder 1/4 Tsp. garlic powder Pinch of nutmeg
