This is a favorite of mine.
4 chicken breasts bone in (or Gardenburger Chiken Grill patties or Tofu cutlets, extra firm, frozen then thawed)
Marinade: 1 cup plain yogurt 1/4 Tbs. cumin 1/4 Tbs. ground cardamom 1/4 Tbs. cinnamon 1/4 Tbs. curry powder 1 Tbs. paprika (or Tandouri colouring if you can find it) 1/2 Tbs. natural meat tenderizer 1/2 cup. lemon juice
Place chicken breasts in glass baking dish, and slash with knife 3 times on each. Poke with fork as well. Mix yogurt and spices together blending thouroughly. Mix tenderizer and lemon juice together and pour over chicken. Let stand in fridge 30 min. Pour yogurt marinade over chicken and brush well both sides. Allow to sit for at least 4 hours in fridge, better if overnight. Heat oven to 450 and bake covered for 40 minutes. Serve with rice or couscous and dhall (optional).
