This is one of my favorite side dishes, great flavor, beautiful color....and SUPER quick for those last minute meals.
1 1/4 cup water 1 cup couscous (unprepared) 1/4 cup raisins (golden preferably) 1 chicken boullion cube 1/4 tsp. cumin 1/4 tsp. cinnamon 1/4 tsp. tumeric 1/4 tsp. garlic powder (or 1/8 if you aren't a big garlic fan) Pinch pepper (white or black)
Add raisins, boullion, and spices to water and bring to a boil. Remove from heat, add couscous cover and allow to sit for 5 minutes or until liquid is absorbed. Fluff with fork and serve.

What exactly is couscous? I've heard people talk about it before, but I have no idea...

It's a pasta actually. It's tiny little "pearls" made from seminola wheat. Couscous is a staple in most Mediterranian and Arabic kitchens. Couscous is very interesting because on it's own it has a very mild flavor, but when you add spices into the pot it absorbs them like a sponge...it's a wonderful side dish. You can add virtually anything to it (it's great with sundried tomatoes and green onions too) and it always comes out perfect as long as you follow the 1 1/4c water to 1c couscous, boil, add, set for 5, and fluff routine. Perfect without fail.

Although it's made from semolina wheat, couscous is similar to Orzo in that it's a pasta that bears a strong resemblance to rice.
Vags this sounds really good and I will definately try this one! Can't wait.
